I am able to see the total cooling load in the summary. But, can you please advise me how can I find what fraction of the toal load is sensible load and what fraction is latent load ?

Do you speak of Summer Design Calculation summary ?
Because latent and sensible load are now in v1.4 displayed. Are you using last DesignBuilder version ?

Version 1.4 is not yet stable release but next to be.
I'm currently using it for my project.
Data you are expecting in Summer Design Day summary are displayed now.

You can download it for a try. In this case I suggest you save your dsb files (project files) then remove DB v1.2, install v1.4 and open your project. It will be automatically updated to new version.

Last version are quite far from 1.2 and you will have many new data to manage so it will take you probably an hour to check. I'd rather to warn you.

And or course, with your file saved, you can go back to v1.2, uninstalling 1.4.

I have understood, with the version 1.2.2.002 I can’t check the Latent Load, but anyway is it calculated? How?

Latent loads are not calculated in v.1.2.

I am able to plot the two loads (sensible Cooling & latent Load )

Shouldn't the sum of both match up to the total load ? When I plot both the graphs and sum them up, they don't equal the total cooling load.

Can you please throw some light to make things clear.
